THis is a goal I have had for many, many years. In fact, I have lost the same 20 pounds so many times that I feel like a professional weight loss yo-yo champ.
Of course, keeping the weight off and not re-gaining even more weight is the great challenge. I am a chef. I teach at a culinary school. I work across 2 meal periods, and the food in our restaurant is not conducive to eating low on the glycemic load scale.
I know I should prepare my own meals and bring them to work with me, but long hours make it difficult to do on a consistent basis. The temptation to grab something off of the menu when I hadn't had time to prepare something from home can be overwhelming.
My other challenge is a lifelong love affair with breads, potatoes and pasta- breads most of all.
However, I feel so very much better when I eliminate white food. I feel better, my arthritis flares less, I don't suffer bloating and abdominal discomfort, I have more energy, I don't get as hungry. So why do I fall off of the wagon?
I am bound and determined to get over my starch addiction and succeed by reducing glycemic load. I believe that it will have the advantage that many other diets do not- there is enough variety to avoid the deadly food boredom that sets in on more restrictive regimes. I will track my progress and let you know!
