Great
hearty low glycemic index stew. To save time in the morning,
chop vegetables the night before. If you don't have a slow
cooker, combine ingredients in a large covered stockpot and simmer for
1 and 1/2 to two hours
Ingredients
2 lbs top sirloin steak
1/2 cup whole wheat flour
1 and 1/2 tsp salt
1/2 tsp pepper
1 and 1/2 cups cups beef broth
1 tsp worchestershire sauce
1 clove garlic
1 bay leaf
1 tsp paprika
4 medium carrots, chopped
12 small new potatos, quartered (or 3 regular potatos, diced)
2 medium onions, chopped
1 stalk celery, thinly sliced
Directions
This stew can be prepared in a slow cooker or stove-top.
For slow-cooker method, mix flour, salt and pepper. Toss meat
with flour mixture in a bowl, until well-combined. Place meat
in slow-cooker. Add remaining ingredients to slow cooker and
stir to combine. Cover and cook on low 10 to 12 hours or on
high for 4-6 hours.
If using stove-top method, mix flour, salt and pepper. Toss
meat with flour mixture in a bowl, until well-combined. Heat
1 tbsp olive oil in large covered stock pot. Add beef and
cook until browned. Add remaining ingredients to pot and stir
to combine. Cover and simmer for 1 and 1/2 to 2
hours.
