A delicious low
glycemic stir fry recipe which is simple enough for every day, but
elegant enough for entertaining. This recipe easily can be
doubled.
Ingredients
8 oz pork tenderloin
2 cloves garlic
2 tbsp soy sauce (or teriyaki, if preferred)
3 medium carrots
3 large celery stalks
3 cups fresh green beans
2 tbsp extra virgin olive oil
Directions
Slice pork into strips. Mince garlic. Cut carrots,
celery and green beans into bite-sized pieces.
Heat 1 tbsp oil in large skillet over medium heat. Saute
garlic until golden. Being very careful not to burn garlic.
Add pork and stir fry until well cooked. Remove and set aside.
Heat remaining 1 tbsp oil. Add celery, carrots and beans and
cook until tender-crisp, approximately 5 minutes. Return pork
and garlic to pan. Add soy sauce and cook aother 2 minutes.
Serve over rice (2/3 cup per serving).
